Recipe for the Italian-Style Cornetto, awarded for best viennoiserie product at the National Arte Bianca Competition 2026 (SIGEP, Italy).

This is a rich, fragrant recipe that celebrates the natural character of this truly Italian product.

Unlike the recipe I use for French-style viennoiserie, here I have incorporated many aromas using specific techniques that give the product an authentic and rich character.

This is not your average cornetto — I recommend enjoying it without any filling to fully appreciate all the aromatic notes of the recipe.
